Enough to encourage growth
some are aggressive defoliation and others never remove anything unless dead, diseased, or infected.

Do you start on top of bottom. Do you cut 
old leaves or new:dog:
I generally prune leaves during flower to prevent shading if there bud sites. Also, during veg I’ll remove dense spots so air flows thru the plant.

I prune pretty heavy before switching to flower. Fan leaves depending on the grow
