Susceptibility to pollination

Hi all. I do a greenhouse, but often open its door to allow ladybugs etc in, which control most pests. Something that has always been a concern to me, and I can’t seem to find any clear info on the web:

For how long during/into flowering are plants susceptible to pollination? Is it right up to harvest, or is there a specific number of days/weeks/months from start of flowering when they are susceptible?

I ask this specifically to make sure I don’t expose the greenhouse plants to possible male seed beig blown about in the wind by accident.

In my experience, as long as the pistols are white, they can be pollinated.

Granted, that’s from 2-3 seasons of making seeds in the 90’s, so I am no expert.
