So I topped my plants and 1 is still growing in the middle where I cut it. You can even see where I cut it. Do I need to cut it again or do I have 3 colas now?

I need more info. Did you remove everything above where you cut, and that grew back? Or did you just score it and not completely remove the top? And is that a calyx?! I’m so confused.
Yes I removed everything from the top. Thinking I may not have made a clean cut.

Its FIMed now. looking like three tops there and maybe some developing on the lower node. reFIMing the three tops would make a nice bush

It appears you have three colas now
A incomplete topping can cause you to have three two new and old top regrows

Question, when should I top and LST her? Also should I be concerned about the yellow leaves creeping up on this girl?
I topped mine on day 30.
You had issues when she was smaller? My plants have looked like that. The new growth looks good, but your soil looks dark (moist) in that picture so be careful with that. In answer to your topping question, after her 4th or 5th node is usually earliest you want to cut anything, but LST can be done at any age to some extent.
