My bud comes off my plants smelling really strong but by the time I dry it the smell is hardly there unless you squeeze the buds…also taste is not sweet…not harsh but not sweet…where am I going wrong? I dry in a cool, dark basement and get about 7 days of drying.

You do lose some terpenes in the drying process. They come back after you jar them.
Slow drying is the best advice I can offer.

7 days is good but ideally you’d wanna shoot for 12- 14 days to be better off. With temps in the 60s and humidity at 60%. You’ll notice after about 3 weeks of burping and curing the semllies will return as @Covertgrower had mentioned.
