Just watch the junctions where the branch comes off the main stalk. When you see a little calyx/ball start to form, watch for it to get a hair or develop a tiny stalk at the base. That will be first indicator.
Has a hair and grows right on the junction= F
Stays like a ball but lifts off the branch on a stalk= M

They look pretty good as they are right now. Just watch for the tops to get shaded by big leaves and you can just tuck them under for a while. No cutting necessary unless they get real bushy.

How long can I keep it like that or what are the steps for that training method

From there you just let the plant lead you. Watch what it does and train to the shape you want.Try to keep all the tops at the same height.
