I have a one simple question, is it good idea to take off your fan leaves and if yes when is the best time to do it?
The answer is no
Leave the fan leaves the store all the sugars tbe plants needs later in the grow

That will have Understanding how the plant works hope this helps you out
Some pruning to thin out canopy is ok late veg early flower but going over board will hurt your yield
